We are well into September now, and finally back into a school routine! I LOVE having a schedule and routine and I HATE having a routine and schedule! I’m sure most of you moms can understand that feeling…
Part of that routine is having an after school snack ready for my girls. Grace is on the crew team…and because she can drive, she takes some of the younger girls to the boathouse after school everyday for practice. They stop by our house to change clothes and grab a snack.
One of the more popular snacks has been these energy bites. I can see why…they are quite tasty and they have a crunchy texture.
The combination of oats and flax seeds gives it that crunchiness, and the chocolate chips are a bonus flavor. And my favorite ingredient…PEANUT BUTTER! Add in some honey, and that’s all you need. Yes, just five ingredients!
It’s a good thing that these are simple and fast to make…since they disappear so quickly! I’ve been making a batch per week and storing them in the refrigerator until it’s snack time.
The printable recipe is below…be sure to grab it in time for snack time!
- 1 1/2 cup creamy peanut butter
- 1 cup semi-sweet chocolate chips
- 2 cups old fashioned oats
- 1 cup flax seeds
- 4 tbsp. honey

Combine all ingredients in a large bowl. Stir to combine.

Place in the refrigerator for 30 minutes. This will make them easier to roll.

Remove from the refrigerator and roll into bites. Store them in the fridge for up to a week.
