Anyone else have leftover Halloween candy tempting you? I hid Claire’s “somewhere” in our kitchen, so I’m not as tempted…besides all the Snickers bars are gone, so I’m not really interested.
However, those miniature peanut butter cups I found in our garage freezer are definitely calling my name! The back story…our garage refrigerator gave out on us and we had a new one delivered last week. When I was cleaning out the food and beverages, and transferring it all to the new appliance…I found them! Miniature peanut butter cups!
So instead of just eating them straight out of the bag, I baked some peanut butter cup blondies.
My advice…if you have some peanut butter cups leftover from Halloween (or in the back of your freezer), try this recipe for PEANUT BUTTER CUP BLONDIES!
- 1/2 cup butter (unsalted)
- 1 1/2 cups brown sugar (firmly packed)
- 1 1/2 tsp vanilla
- 2 eggs
- 1 1/4 cups flour
- 1/4 tsp salt
- 1 cup miniature peanut butter cups

Preheat the oven to 350 degrees. Spray a 9 inch square baking dish with nonstick cooking spray.

In a medium saucepan, melt the butter and brown sugar until the sugar dissolves. Let cool 10 minutes.

Add the eggs and beat into the mixture.

Stir in the vanilla.

Fold in the flour and salt.

Once completely cool, fold in the peanut butter cups.

Spread evenly in the prepared dish.

Bake 25-30 minutes. Don't overbake. Transfer to a wire rack and allow to cool. Cut into bars and serve.
